Hi all! I'm a vegetarian who leans on the vegan side. I'm looking to share some delicious, filling vegan recipes. What's your favorite?

The other day I made a burrito bowl out of cumin and spice seasoned sweet potato, pink beans, and avocado. So quick to make and delicious!

Lately I've been doing red quinoa, with onions, with roasted sweet potatoe with balsamic vinegar. Then a huge salad. Last night I did medeteranian veggies with olives and a bit of tomato paste, cooked in a garlicky oil with some potatoes and spinach. Lots of Asian stirfrys with tofu. Falafels made from packet with hummus, olives, carrots.
Honestly just fill yourself up on salad, have huge portions of it and you won't want to eat for a while . My roommates think I'm crazy as to how much salad I eat haha.

I get a lot of my meals from www.happyherbivore.com. I started out using the recipes on her website and now own two cookbooks. I've also purchased a couple of the meal plans which include recipes. Some of my favorite dishes that I go back to a lot are the mock tuna salad, Buddha's Deight (like a veggie bowl), and all of the different burgers (chickpea, black bean, etc.). There's also a quick sweet potato soup that I think takes about 5 minutes to make and it is delicious.

In addition to all the suggestions already posted, I also cook a lot from "Appetite For Reduction" from Isa Chandra Moskovitz and love www.blog.fatfreevegan.com.
