Healthy pancakes

Anyone have any healthy pancake recipes? I use the Walden Farms Syrup but need something different for the cake : )

    Honestly ... LOL I just make the standard Aunt Jemina pancakes, add in some blue berries and banana (makes it taste like a banana muffin!) With low calorie Mrs. Buttersworth. I just plan my day ahead of time so I know I have enough room for two good size pancakes. With the extra veggies on top it is very filling.
    Sorry, but I refuse to mess with my pancakes! They are one of my favourite treats lately.

    1/2 cup quick oats
    1/2 cup egg whites
    1 small banana (mashed)
    1 tablespoon all natural peanut butter
    1 teaspoon cinnamon
    1/4 cup fresh blueberries

    Mix it all together - cook on griddle, just like a pancake :)

    i use bisquick but replace one egg with flax seed meal and i add blueberries to mine. my husband loves them and could not taste the flax seed meal. next time i make them i'm going to replace both eggs with the flax seed.

    Ugh now i want some. .

    Honestly, I replace the liquid with plain seltzer which makes them INSANELY fluffy. I also like to use mashed banana as an egg replacer. it works out great :)

    I top them with homemade berry compote, or coconut syrup.

    OK - question, so if 1 cup milk is called for, you will replace with equal portion of seltzer? and if one egg is called for, replace with one mashed banana? I'm intrigued as pancakes are my kids favourite weekend breakfast and I often make them only for the kids! :sad:

    GINGER BREAD PANCAKES (225 CAL)

    1 cup
    Low-fat buttermilk

    1 cup
    Oats (use gluten free oats if sensitive to gluten)

    2
    Egg whites

    2 tbs
    Low fat milk (or milk substitute)

    2-3 pkts
    Stevia (or 1/2 tbs sweetener of choice, or to taste)

    3/4 tsp
    Ground ginger (dry spice)

    1/2 tsp
    Cinnamon

    1/4 tsp
    Pumpkin pie spice (or nutmeg)

    1/2 tsp
    Salt

    1 tsp
    Baking powder

    REMEBER THESE SHOULDENT BE EATEN EVERYDAY BUT ARE A VERY NICE CHANGE:)

    I make mine in a similar fashion. Add 1/2 cup of cottage cheese and take out the peanut butter and banana. I use agave nectar as a syrup, a tiny bit goes a long way!

    Greek Yoghurt Pancakes - Delicious with a thin spread of nutella & chopped up strawberries!
    Ingredients:
    6 ounces of low fat greek yogurt
    1 egg white
    1 tsp baking soda
    1/2 cup of flour

    Directions:
    Mix the yogurt and egg white in a bowl. In a separate bowl, mix the flour and baking soda. Combine all ingredients together and cook like you would regular pancakes.

    Trader Joe's has a great blueberry pancake recipe using their multi grain baking mix - I don't have it on me right now but I believe it's online. I use apple sauce instead of oil and I don't even need syrup with them.

    I recently made cottage cheese oatmeal pancakes and they were runny and thin, but good:
    1/2 c oats
    1/2 c cottage cheese
    3 egg whites
    a bit of sugar and cinnamon

    blend all ingredients then cook as pancakes. High protein.

    For my kids, I make a healthier pancake recipie too

    2 c flour (half white, half wheat, or 1/2 c white, 1 c wheat and 1/2 c almond meal)
    1 teaspoon baking powder
    1 teaspoon baking soda
    3 eggs or 3/4 c egg beaters
    1T oil or melted butter
    2 c keifer or buttermilk (keifer is like liquid yogurt you use it like buttermilk but its even higher in protein)
    3 T sugar
    cinnamon

    1 cup whole wheat
    1 cup milk (I use skim or almond)
    1 egg
    1 tsp baking powder
    3 tbsp flax
    Dash of vanilla if you choose.

    You can also mix in some blueberries or a banana... super yummy, low cal. EASY!

    those pancakes are the BEST! So fluffy and light.

    This recipe yields ~ 8-9 pancakes with 1/4 cup measurement.

    3/4 cup of 1% milk *
    2 TBSP of vinegar
    3 packets of stevia
    1 TSP of baking powder
    1/2 TSP of baking soda
    1/2 TSP of salt
    1 cup or 120 g of King Arthur White Whole Wheat Flour *
    2 egg whites *
    2 tbsp of Brummel and Brown Spread (melted)

    Steps:
    1. Combine vinegar and milk and let sour for 5 min or so.
    2. Combine all dry ingredients (baking powder, sugar, flour, salt and baking soda) in separate bowl
    3. Whip egg whites to get soft peaks.
    4. Combine all wet ingredients except egg whites to dry ingredients just until combined (DONT OVER MIX)
    5. Fold in egg whites.
    6. Cook like any other pancakes.

    NOTES:
    1. The milk and vinegar is what makes the pancakes super fluffy like buttermilk pancakes. I have tried with skim milk and the pancakes werent as fluffy and thick as i liked but try at own risk.
    2. You can use white whole wheat flour or regular flour or whole wheat flour. Maybe a combination of white whole wheat and regular white would be better but the white whole wheat flour is really good. I personally don't like the taste of all whole wheat flour.
    3. The egg whites when beaten correctly and incorporated makes the batter airy and the pancakes fluffier.
