I've never cooked or eaten it before but I've read good things about it.

This is one of my favorites! Quinoa, mango & black bean salad. I've been making it to take to work for lunch.

I LOVE this recipe...hearty and healthy with a bit of a spicy kick due to the cayenne pepper

This one is amazing warm, cold, 5 days old you name it! I have begun just chopping up whatever veggies I need to get rid of and putting them in this salad. I usually only use white beans too...but the premise is awesome and it's obviously super adaptable.

I love the enchiladas I make with quinoa. If you look for Dr. Oz Lean Bean Enchilada Supreme, you should find the recipe. I haven't tried it with the cabbage yet, because it hasn't come into season, and I use greek yogurt in place of the cottage cheese. Really tasty! Since I don't know what enchilada sauce is, I just use a bit of salsa and mix in a little bit of chipotle and adobo with the yogurt. Gives a little kick0

I make stuffed peppers with Quinoa and chicken or pork breakfast sausage. Even my teenage son will eat them. The recipe:
4 sausage links sliced and browned til crisp.
A whole diced medium onion cooked in 2t olive oil
2 c quinoa, can of fire roasted tomatoes
2 garlic cloves
salt & pepper to taste
Mike all ingredients but peppers together
Top each pepper with 2T of cheese of ur choosing
It will fill 3-4 peppers. Half peppers, I always do the slicing from stem to bottom to fill 2 sides of pepper rather than cutting the top off. Cook for about an hour at 350degrees in a baking pan with a 1/4 cup of water in the pan with the peppers. If I'm short for time I broil the peppers under the broiler and then fill with the hot mix from the stove top and eat.0
