Its soooo easy and healthy as well as yummy.

2 chicken breasts cooked and cubed up
1 can of chicken broth
2 cups of minute brown rice
1/2 cup of chopped red onions (optional)
1.2 cup of chopped red or green bell peppers (optinonal)
1 cup of fresh spinach
1/2 cup of black beans (optional)

combine the chicken, red onions, bell peppers, soinach and black beans in a medium sized sauce pan. Mix well
add the chicken broth and the minute brown rice (uncooked) and bring broth to a boil over medium heat.
once the broth is boiling, mix well, cover and simmer for 5 minutes.

there you go, I wasn't too sure about it but it is delicious and it makes plenty for me and my husband to have another meal later in the week.

  • Sounds delicious! I'm kinda new here, so maybe I'm overlooking or am unaware of a feature, but where is the nutritional breakdown for this recipe? So we can add it to our calorie-count? Thanks!

..........or do I just need to figure the calories, carbs, etc., by the individual foods?
