Its soooo easy and healthy as well as yummy.
2 chicken breasts cooked and cubed up
1 can of chicken broth
2 cups of minute brown rice
1/2 cup of chopped red onions (optional)
1.2 cup of chopped red or green bell peppers (optinonal)
1 cup of fresh spinach
1/2 cup of black beans (optional)
combine the chicken, red onions, bell peppers, soinach and black beans in a medium sized sauce pan. Mix well
add the chicken broth and the minute brown rice (uncooked) and bring broth to a boil over medium heat.
once the broth is boiling, mix well, cover and simmer for 5 minutes.
there you go, I wasn't too sure about it but it is delicious and it makes plenty for me and my husband to have another meal later in the week.

Sounds delicious! I'm kinda new here, so maybe I'm overlooking or am unaware of a feature, but where is the nutritional breakdown for this recipe? So we can add it to our calorie-count? Thanks!
..........or do I just need to figure the calories, carbs, etc., by the individual foods?0
