I want to start incorporating quinoa into some of our meals... do you have quinoa recipes or recipe sites that you can recommend? Please share. Thanks!

    That's a good one and you can sign up to have daily recipes e-mailed to you. I think there's a free e-book somewhere on the site you can download, or at least it was free when I signed up.

    I made this recipe the other night to go with the tacos I cooked. It was SO delicious! I was scared because it was my first time making quinoa...but it was so good!

    I use Ancient Harvest it says no rinsing required so NO I don't. I would if I got in bulk or box that recommened to do so.

    I usually make curry chicken or beans(VERY high protein count on those). I also love to combine with a no salt diced tomato can and some basil and/or Italian seasoning. Makes a great soup.

    Great site! I usually make quinoa with sauteed black beans, corn, green peppers, and onions. It's great warm or cold.

    Cheesy Quinoa Mac & Cheese
    Serving Size: 8
    Ingredients
    • 1 1/2 cups quinoa, rinsed and drained
    • Veggies of your choice (optional)
    • good pinch of salt
    • a few grinds of seasoning salt
    • 2 cloves garlic, minced
    • 2 large eggs
    • 1 cup soy milk or non-fat milk
    • 1 1/2 cups grated Cheddar cheese, more for sprinkling
    • Optional- Crushed Red Pepper, Panko Bread crumbs for topping
    • Toppings (optional)- salsa, hot sauce, sour cream, scallions

    1. Lightly saute any veggies you would like in this dish.
    2. Cook quinoa to packaged instructions until fully cooked. (About 15 minutes)
    3. Preheat oven to 350 F. Coat 13x9 inch dish( or 8 individual ramekins) with cooking spray.Whisk together eggs and milk in large bowl. Fold in quinoa mixture and cheese. Stir very well and let some of the cheese melt. Transfer to prepared baking dish and if using Panko Crumbs or Bread crumbs add now and bake 30-35 mins, until bread crumbs are browned.

    for veggies added a half of onion and orange peppers

    No recipes from me; however, I really like the sun dried tomato quinoa that you can get at World Market. It is delish!

    And BTW, how do you pronounce it anyway? The M-I-L and I are having an ongoing discussion about this, LOL.
