i tried one and it is delicious:
1 tbsp Honey
1 tbsp Apple Cider Vinegar
1 tbsp Olive Oil
1/4 cup of Orange juice (from the fruit not from the carton)0 -

Got this from a Bobby Flay dish:
1 TBSP Dijon Mustard
1 TBSP Honey
1/4 cup Red Wine Vinegar
1/2 Extra Virgin Olive Oil
It's so great! It went with a Quinoa, Asparagus, Olive, and Goat Cheese Salad0 -
dijon mustard
fresh squeeze lemon juice
salt/pepper
extra virgin olive oil
you can add a little honey if you want0 -
I simple one I used on my salads is
Olive Oil, Splash of soy sauce, and some lime.0 -

Tomato Stack Salad with Corn and Avocado
Ingredients
Dressing:
1/3 cup low-fat buttermilk
1/4 cup chopped fresh cilantro
2 tablespoons reduced-fat sour cream
1 tablespoon reduced-fat mayonnaise
1/2 teaspoon grated lime rind
1/4 teaspoon minced fresh garlic
1/4 teaspoon salt
1/8 teaspoon ground cumin
Dash of ground red pepper
Salad:
4 medium heirloom tomatoes (about 2 pounds)
1/4 teaspoon salt
1/4 cup very thinly vertically sliced red onion
1 cup diced peeled avocado (about 1 small)
2 ears roasted corn
Coarsely ground black pepper (optional)
Preparation
1. To prepare dressing, combine first 9 ingredients in a small food processor or blender; process 30 seconds or until pureed, scraping sides of bowl occasionally. Cover and chill.
2. To prepare salad, slice each tomato crosswise into 4 equal slices (about 1/2 inch thick). Place 1 tomato slice on each of 4 salad plates; sprinkle slices evenly with 1/4 teaspoon salt. Top each serving with a few onion pieces and about 1 tablespoon avocado. Repeat layers 3 times, ending with avocado and corn. Drizzle 2 tablespoons dressing over each serving; sprinkle with black pepper, if desired.

favorite juice from jar of peppers (jalapeno, sport, any of the vinegar based ones)
little extra virgin olive oil
or the opposite
oil from giardinerra

Classic vinagrette is about 3-4 parts olive oil to 1 part lemon or vinegar, so almost 200 kCal for 2 Tablespoons. Some reduced fat dressings I like are:
Oriental
1 part nut oil (hazelnut, walnut or sesame)
1 part soy sauce
1 part balsamic vinegar
Light Ranch
2 parts buttermilk
1 part mayonnaise
dried herbs and garlic salt to taste
