Easy Nutrition for Men?

Hello everyone, I need some help.
Recently my boyfriend turned 21 and has been drinking beer almost everyday because he can. However, he is starting to develop a beer gut that he is becoming self-concious about and since I've been making strides toward my health he wants to get back in shape with me.
The only problem is he is SUPER lazy when it comes to eating. Like to the point where microwaving is too much of an effort so he just eats leftovers cold. He also doesn't really know anything about cooking and, since we don't live together, I can't do it for him.
My game plan is to show him how to make healthful food choices and basics of cooking [and reheating ;)] as well as cook "make-ahead meals" with him that he can just reheat over a couple of days.
Does anyone have any suggestions about male nutrition (what kind of foods he should be eating, etc) as well as yummy meals that can be stretched over a few days?
