I want to start incorporating quinoa into some of our meals... do you have quinoa recipes or recipe sites that you can recommend? Please share. Thanks!

    That's a good one and you can sign up to have daily recipes e-mailed to you. I think there's a free e-book somewhere on the site you can download, or at least it was free when I signed up.

    I made this recipe the other night to go with the tacos I cooked. It was SO delicious! I was scared because it was my first time making quinoa...but it was so good!

    I use Ancient Harvest it says no rinsing required so NO I don't. I would if I got in bulk or box that recommened to do so.

    I usually make curry chicken or beans(VERY high protein count on those). I also love to combine with a no salt diced tomato can and some basil and/or Italian seasoning. Makes a great soup.

    Great site! I usually make quinoa with sauteed black beans, corn, green peppers, and onions. It's great warm or cold.

    Cheesy Quinoa Mac & Cheese
    Serving Size: 8
    Ingredients
    • 1 1/2 cups quinoa, rinsed and drained
    • Veggies of your choice (optional)
    • good pinch of salt
    • a few grinds of seasoning salt
    • 2 cloves garlic, minced
    • 2 large eggs
    • 1 cup soy milk or non-fat milk
    • 1 1/2 cups grated Cheddar cheese, more for sprinkling
    • Optional- Crushed Red Pepper, Panko Bread crumbs for topping
    • Toppings (optional)- salsa, hot sauce, sour cream, scallions

    1. Lightly saute any veggies you would like in this dish.
    2. Cook quinoa to packaged instructions until fully cooked. (About 15 minutes)
    3. Preheat oven to 350 F. Coat 13x9 inch dish( or 8 individual ramekins) with cooking spray.Whisk together eggs and milk in large bowl. Fold in quinoa mixture and cheese. Stir very well and let some of the cheese melt. Transfer to prepared baking dish and if using Panko Crumbs or Bread crumbs add now and bake 30-35 mins, until bread crumbs are browned.

    for veggies added a half of onion and orange peppers

    No recipes from me; however, I really like the sun dried tomato quinoa that you can get at World Market. It is delish!

    And BTW, how do you pronounce it anyway? The M-I-L and I are having an ongoing discussion about this, LOL.

    Sounds delicious but I think I will add zucchini and yellow squash

    Here's mine:

    Garlic Mushroom Quinoa (serves 4)

    Quinoa 184 g (1cup)
    Olive Oil - Extra Virgin, 1 tbsp
    Swanson - Chicken Broth - 99% Fat Free, 2 cup
    Sliced Mushrooms, 1.5 cup (230g)
    Minced Garlic, 3 tsp (5g)
    Crumbled Goat Cheese, 1/2 cup
    Avocado Raw, 1 avocado

    I prepare the quinoa in the chicken broth (in place of using water), while the quinoa is cooking I saute the garlic and mushrooms in the olive oil. once this is done I mix the quinoa in with the mushrooms and garlic. Finally I sprinkle the goat cheese on top and slice the avocado and place on top. Each serving getting 1/4 of an avocado.

    Using the recipe builder here it comes out to 331 cal a serving. The recipe can be easily modified to include more or less avocado and feta works well too.

    I usually cook it in the rice cooker and then stir fry it with whatever vegetables and beans I've got hanging around. I've yet to have it not turn out delicious. :)

    Quinoa question.....
    I made it in the microwave a couple of times and work according to the instructions on the Ancient Harvest box and it turned out horrible!! Anyone have any suggestions?
