Smashed Chickpea and Avocado Salad Sandwich

Options
1 (15 ounce) can chickpeas
1 large ripe avocado
1/4 cup fresh cilantro, chopped
2 tablespoons chopped green onion
Juice from 1 lime
Salt and pepper (optional, of course)
Whole Wheat or Rye bread
Any kind of sandwich topping like lettuce, spinach leaves, etc.

Mash up the chickpeas and avocado in a bowl. Add cilantro, green onion, and lime juice. Season as you want. Throw it on some bread with lettuce or spinach leaves. Yum!

Makes 3-4 sandwiches and saves well in the refrigerator.

This is great for me as a college student - it's heathly, quick, can be made in bulk, and most importantly, delicious!
