What are some of your favorite low carb foods?

I keep going over in carbs which I am thinking is part of why I am not loosing. I have been counting calories for 3 weeks and this past week the scale showed no loss :( I am eating between a minimum of 1200 cals a day. I have done pretty good with the exception of yesterday in which I splurged on stromboli, but I still didnt go over 2,000 cals.

I'm on a low carb diet, too. I eat a lot of salads with lean meats and fish, mashed cauliflower, omelets and I'm in love with "muffin in a minute" the flax seed meal muffins. That gives me a "bread" fix without the carbs. For snacks or a light, quick meal, I'll eat deli meat rolled up with cheese slices and basil or other greens or maybe mustard. Hope this helps! I joined a low carb group on MFP and also google low carb diets, too for new ideas. Good luck!

I'm currently eating 30% carbs, 50% protein, 20% fat. Feel free to friend me if you'd like! My diary is open to friends :)

I do a lot of egg whites, cottage cheese, plain Greek yogurt, lean meats and enough complex carbs to maintain a vigorous exercise regimen!

If I'm in a hurry, I mix a can of tuna with seasoning (rosemary, thyme, pepper, garlic) and then put it on top of 3-4 large celery stocks. It's very filling and healthy, but not too exciting on a daily basis.

Meat/fish, eggs, cheese, lots of veggies. I try to eat lower/moderate carb, but with lifting heavy and rugby pre-season training I've been eating a little more than usual. My diary is open if you'd like to look. I still eat some potatoes and rice and fruit but avoid grains and sugar as much as possible. I know fruit still has sugar, but I try to stick with some that are lower sugar.

    Typical meals:
breakfast: bacon or sausage and eggs. plain, full-fat greek yogurt & berries if I'm in a hurry or don't feel like eggs.
lunch: salad with some protein & avocado or leftover protein & veggies
afternoon snack: hard boiled egg or macadamia/pistachio nuts
dinner: same as lunch. pack leftovers from dinner for lunch the next day.

    spaghetti squash

ooh, a good one I forgot! I've recently discovered spaghetti squash. It's lower-carb and makes a TON! It doesn't exactly sub for conventional spaghetti noodles for me, but it's a good filler food. Kind of like faux-tatoes made from cauliflower doesn't taste anything like mashed potatoes to me, but I still like it!
