Non-obvious healthy recipies?

Hey,
It's my last week of my summer job and it has been agreed that we'll all bring something or bake something to bring in on my last day.

As I'm trying to lose weight I don't want to add to the really bad chocolate and cake which will obviously make an appearance, but I don't want to bring carrot sticks and hummous, or anything obviously healthy and low-cal!

Have any of you got a recipe for something sweet but fairly low in cals that I could make for Friday?

    Sub applesauce for the oil in what you are baking.

    banana pudding- just layer sugar free/fat free banana pudding, banana slices, low fat vanilla wafers and cool whip free. Delicious and no one would think twice.

  • sugar free strawberry jello with fresh or frozen (not the kind with syrup) strawberries - After it chills and right before you eat, mix in low fat cool whip and stir until everything is mixed well. I put some strawberry halves on top for 'decoration'. Friends and family love it and I don't have to tell them it's fairly healthy.

    You can mix a can of pumpkin (the smallish, soup size can, not the jumbo one) with a box of any flavor cake mix and bake per the directions. You don't need to add the eggs or oil or anything --- just the box of mix and the can of pumpkin. It's really good with chocolate -- you don't taste the pumpkin at all. And really, really good with flavors like carrot, apple spice, etc. that you would guess would go well with pumpkin. The calories will depend of course on how big your servings are, but it's a very easy and fast recipe when you're in a pinch.

    Something savoury like a salad of pasta with roasted vegetables and pesto? Or if it has to be baked just google for healthier cake/cookie recipes. My local deli does amazing cupcakes in carrot & ginger or chocolate & beetroot which taste very rich and indulgent but are really pretty healthy, and because they are small it helps with portion control

    Asian salad

    shredded cabbage (1/2 head)
    shredded lettuce (1/2 head)
    2 cups frozen peas (run under cold water to defrost a little)
    shelled edamame (cup)
    1/4 or 1/2 cup finely chopped green onions
    1/4 cup cilantro
    1/2 cup unsalted peanuts
    1/2 cup chow mein noodles (La Choy brand)
    Bottle of Lite Ginger Sesame dressing.

    Toss everything except the chow mein noodles and dressing together in a large serving bowl. Top with chow mein. Have guest add their own dressing. Easy Peasy.
