Salsa recipes
I'm a salsa junkie! I use salsa on a lot of my foods. And not the store bought garbage. I either make myself or I have a friend that makes a great salsa. I have used it on eggs, salmon, pork, chicken, in rice and on salads.
I'm looking for any new recipes or ideas to use or that include salsa.

Bump! I am a salsa junkie too. Here is the recipie that I got from an MFPer a few months back. I have used it and LOVE it).
Boil: 3 large tomatoes, 2 serrano peppers, 1 jalapeno pepper for 20 min (or when skin starts coming off tomatoes)
Chop: 1 small yellow onion and cilantro and put in blender
Add boiled tomatoes and peppers and puree.
Serve hot....YUM!0 -

This are my favorites
Pico de gallo (all chopped)
-1/4 Onion
-Fresh Cilantro
-1 or 2 Tomatos
-1 Jalapeno
-Salt
Red Salsa (put everything into blender)
-2 Tomato
-1/4 Onion
-2 Garlic cloves
-Jalapeno
Green Salsa (also in blender)
-Tomatillo
-Onion
-Cilantro
-Salt
-Jalapeno or Serrano
Guacamole (Somehow the milk makes it creamier and helps to stop the avocado oxidation process)
-1 avocado
-2 oz of milk
-Jalapeno
-Salt0 -
2 and1/2 tomatoes cut into 4 quarters
1 large jalapeno cut into quarters
1 small onion cut in 5-6 big pieces
3 cloves garlic cut in half
1-2 Thai green chillies if you want it hot
½ cup cilantro/coriander
Juice of ½ a lime/lemon
Pinch of salt
Sauté all the above ingredients except for the cilantro and lemon juice in a teaspoon of olive oil in a skillet and let them get a little charred and blackish-looking. Let it cool. Then put it in a blender along with the cilantro and lemon juice and blend until smooth or chunky depending on preference. After this, I like to refrigerate it as I like the flavours to feel hot and cold on my tongue.0 -
This is a low-fat salsa that I make all of the time - you can use fewer chillies if you wish...I often use just 1 if they are a bit hotter, or you can use chilli flakes :-)
INGREDIENTS:
250g/9oz fresh tomatoes, finely chopped
1 small onion, finely chopped
3 mild chillies, finely chopped
bunch coriander, finely chopped
salt, to taste
lime juice, to taste
1 tbsp water
PREPARATION:
To make the salsa, combine all the ingredients together in a bowl and serve.

I just made this one:
Cucumber Salsa:
6 cucumber
4 tomatoes
2 jalepeno peppers
medium onion
minced garlic
2 pkgs dry ranch dressing mix
1 cup rice vinegar
Mix the ranch and vinegar together.
chop the cukes and tomatoes and onion and mix together in bowl with garlic(as much as you like)
pour the vineger mixture over and refirigerate. YUM!
I use it for salad dressing but is good with chips as well. it makes ALOT!0 -

This is great with chips or on fish, don't forget the fresh cilantro
MANDARIN ORANGE PICO DE GALLO MAKES 6-1/2 cups
PREP TIME: 10 Minute(s)
STAND TIME: 5 Minute(s)INGREDIENTS
2 cans (11 oz. ea.) mandarin oranges, drained and halved
1-1/2 cups finely chopped red onion
2 cups seeded and chopped tomatoes
1 Tbsp. Knorr® Chicken flavor Bouillon
1/3 cup lime juice
PREPARATION
Combine all ingredients in a glass bowl. Let stand about 5 minutes. Garnish with cilantro and serve with tortilla chips.
Also terrific with Knorr Chicken Bouillon Cubes. Simply substitute 1 cube for 1 tablespoon granulated bouillon.0 -

fresh salsa
basic
diced ripe plum tomatoes - seeded
Red onion diced
cilantro chopped
lime juice fresh squeezed with the lime zest
red/green pepper diced
garlic clove minced
Hot Pepper seeded and diced - change the pepper type depending on you heat level
To the base you can add any or all
roasted corn
black beans
dice mango or peach or pineapple
Roasted veggies
