New crock pot - ideas?

I just bought a 1.5 qt crock pot so I can make my lunches for the week to bring to work. Anyone have any ideas for yummy low-cal recipes?

    Chicken breasts, corn, black beans, salsa (or rotel tomatos) - Throw it in the crock pot for 4 - 6 hours (depending on chicken thickness). Shred the chicken and mix it back in the pot.

    I think I used 4 chicken breasts, 1 can corn, 1 can black beans and 1 large can rotel tomatos with green chilies. I would say this is something you could change up if you are taking it to work each day. You could eat with rice one day, one a tortilla one day, or by itself one day. You could put a little sour cream or cheese on top if you have some extra calories. Yummy!!!

    I'm actually looking for some easy crock pot recipes myself. Hopefully others will share. :smile:

    cook frozen chicken breasts with a little broth (just enough to cover) for about 6 hours. Shred the chicken, then mix some low-sugar BBQ sauce in it. Serve on a bun with a few pickles. Divine!!

    chicken breast/tenderloins
    a few fresh tomatoes cut into chunks
    dash of taco seasoning
    bit of salsa
    beef/chicken broth to cover
    low for 6-8 hours

    dry rub on pork loin with Garlic, onion and what ever spices you like or veggies you like. I'll make cole slaw to go with mine.
    I also do a beef roast with onions, celery, carrotts.

    Cook a loin of pork in one bottle of root beer on low for 6 hours. Discard liquid, shred pork, mix with bbq sauce.
