any easy tofu recipies?

I just bought way too much tofu and I want to make some for dinner, all i know is plain tofu with some soy sauce :-(

  • I will tell you my favorite tofu recipe, though you would probably have to try this another day because I doubt you would have all these ingredients on hand.

    Curried Tofu Salad
    Serves 4

    Ingredients:

    * 1 16-oz. block extra firm tofu, pressed, drained, and cut into bite-sized cubes
    * 2 Tbs. cumin seeds
    * 1 red bellpepper, chopped
    * 1 cup shredded carrots
    * 4 scallions or green onions, chopped
    * ½ cup packed fresh cilantro, finely chopped
    * ¼ cup raisins
    * 4 cloves garlic, minced
    * ¼ cup vegan mayonnaise (I am not vegan so I just use low fat cage free mayonnaise)
    * 2 Tbs. mango chutney
    * 1 Tbs. lime juice
    * 3 tsp. curry powder
    Salt, black pepper, and red pepper flakes, to taste
    Cashews, almonds, or pistachios, to serve

    Directions

    Preheat the oven to 400˚ F. Spread tofu cubes onto a baking sheet sprayed or greased with cooking oil, and bake for 30-40 minutes, flipping cubes once about halfway through. Allow to cool.
    Meanwhile, in a skillet on the stovetop over high heat, toast cumin seeds just until they begin to pop and smell fragrant. Remove from heat immediately and transfer seeds to a small bowl to cool. Set aside.
    In a large bowl, combine chopped bellpeppers, shredded carrots, scallions, cilantro, raisins, minced garlic, toasted cumin seeds, and baked tofu. In a smaller bowl, stir together mayonnaise, chutney (if using) lime juice, and curry powder, mixing well. Pour mixture over veggies and tofu, adding salt, black pepper, and red pepper flakes as desired, and stir well to coat everything evenly. Allow to chill before serving garnished with roasted nuts of your choice.

    It depends what kind of tofu you have!
    If it's firm tofu, i love slicing it up into thick rectangles and letting it chill out in a bowl of soy sauce, sesame oil, grated ginger and garlic, and then dry frying it in a pan and serving it in whatever (on salads, as a filling for burgers with a wholemeal bun and some sliced tomatoes, avocado and rocket, etc.) or for vegan quiche.
    Or silken tofu, as someone's already suggested- scrambled tofu is the BEST. Or use it in smoothies/vegan omlettes/in miso soup.

    Or you can make tofu dip with other things.... curried tofu dip is awesome with carrot batons (:
  • Oh yeah, silken tofu tastes awesome with fruits and ice in a blender. Maybe with some honey. :)

    I also love tofu stir fried in sweet Hawaiian pineapple sauce with veggies served with rice.
