Low calorie carrot cake recipe anyone?

I actually happen to love carrot cake and It would be nice to be able to make it as a treat once in a while, anyone have a good low-cal recipe?

    I would be interested too! Its my hubby's favorite cake and I like it as well. There must be something for it thats healthy AND tastes moist and good as well!

    hum. instead of oil, use a can of pumpkin?

    i bet pumpkin/carrot cake would be divine!

    i've tried it with chocolate cake, and it really is very subtle. i think it was a weight watchers recipe.

    i'm all about experimenting. i might have to find a recipe and try the canned pumpkin in place of oil for carrot cake....hmmmm.

    The first one has coconut and pineapple in it though, but I bet its moist, the second looks more like regular carrot cake! :-) YUM!!

    i did a search and found this, not sure if the calorie count is accurate per serving so i might make a recipe on here and see what we come up with :)

    some people who commented did things like replaced the vegetable oil with apple sauce and 1tbsp of oil, replace the 1 cup of cake flour with 1 cup whole wheat flour (can you get whole wheat cake flour?), and used just egg whites though tbh i don't give a poo about the egg "issue" i grew up on a farm and i eat ALLLLLLLLLL the egg lmao.

    You have to scroll down a bit, but she has a carrot cake cupcake recipe and one for carrot cake balls...the cupcakes are about halfway down and the carrot cake balls are about 3/4 of the way down the page. She has most of the nutritional information provided along with the recipes too

    This Carrot Cupcake recipe is from my Hungry Girl cookbook, Enjoy :)

    Ingredients
    11/2 Cups shredded carrots
    1 Cup moist styled cake mix(1/4 of an 18.25 ounce box)
    3/4 Cup whole wheat flour
    3/4 Cup pure pumpkin puree
    2/3 Cup fat free egg substitue
    2/3 Cup canned ,drained pineapple
    1/2 Cup no calorie sweetner
    1/4 rasins
    2 Tablespoons brown sugar
    11/2 Teaspoons pumpkin pie spice
    11/2 Teaspoon cinnamon
    1 Teaspoon baking powder
    Frosting
    4 Ounces fat free cream cheese- room temp
    1/3 Cup fat free greek yogurt
    2/3 Cup no calorie sweetner
    1/2 Teaspoon vanilla extract
    -Directions
    Preheat oven to 350
    In a mixing bowl, combine all frosting ingredients then using a fork, wisk until smooth, refridgerate.
    In a large bowl, combine cake mix, flour, no cal sweetner, brownsugar, cinnamon and baking powder. Set aside.
    In another bowl add pumpkin and egg substitute with 1/4 water, stir until blended. Add pumpkin mixture to the dry ingredients and blend together, then add carrots,pineapple, and rasins, mix well.
    Line or spray 12cup muffin pan and even distribute the mixture within the 12 cups. Bake for 20-25 minutes or until toothpick comes out clean. Cool cupcakes completely before frosting then refridgerate so the icing can set.
    Per Serving(1 frosted cupcake)
    Calories= 133
    Fat= 1g
    Sodium= 197g
    Carbs= 26g
    Fiber= 2g
    Sugar= 11.5g
    Protien= 5g
