Taco Soup (Fabulous and Easy)
My husband and I made this for dinner. The hardest part was cutting up the onion! I loved that it was quick. It is filling and delicious! We also had a fruit salad with it! Try it!
1/2 pound extra lean ground beef
1/2 c. chopped onion
2 ten ounce cans Rotel Diced Tomatoes with Green Chili
1 fifteen ounce can tomato sauce
1 fifteen ounce can corn, drained
1 15 ounce can red kidney beans, drained and rinsed
1 Tbsp. chili powder
1 1/2 tsp. ground cumin
1/8 tsp ground red pepper (optional)
Preparation
Brown ground beef with onions. Add the other ingredients and stir. Simmer over medium heat for 15 min. It's so simple!

Cholesterol 30 mg.
Sodium 570 mg.

It's not my recipe. My husband got it from a low cal cooking website...don't know which one. Anyway, I checked all the ingredients to make sure the calorie count is right, just to be sure. The only change I made to the recipe was that I used Rotel instead of plain diced tomatoes.0

I make a version of this but use shredded chicken instead of the beef. Plus a jar of salsa instead of the rotel, no onion, and a packet of ranch dressing mix and a packet of taco seasoning.I use black beans instead of the kidney beans. Plus some chili powder to taste.Add water to make soup desired consistency. Have also made it without the meat and just the beans and have added some spinach to it, yummy!0
