High-fiber dinner?

What could I make for dinner tonight that has a lot of fiber in it?
I'm cooking for one so either something single-serving or something that wouldn't make a TON of leftovers would be best. And the leftovers that I would have should be easy to reheat without getting funky.

    Make your own healthy Jumbalaya! Brown rice, packed with your favorite beans and veggies!
  • You can choose some sort of whole wheat or healthy pasta; it's great because you can create your own serving size. Saute some of your favorite veggies: brocolli, mushrooms, red peppers, orange peppers, sugar snap peas, etc. Add to the cooked pasta with some basil, a dusting of parmesean or mozzerella cheese, and add chicken if you want more protein. Yummy! And healthy!
