Cooking for a meat lover and a non meat lover

I don't mind cooking for myself, but I'm trying to cook for the boyfriend and I so I can trick him into eating better... I mean so we can have nice evenings together or something.

He has a very very very limited diet. He grew up eating out at restaurants (fast food and sit down) for nearly every meal. His diet consists of Popeyes, a gyro or a hunk of red meat (no potato required). He despises pretty much anything besides that. No fruits, no veggies, no breads (how can one not enjoy a sandwich?), no pastas... I'm not being facetious in the slightest.

I am the exact opposite in that I hate red meat (though I like chicken and fish, don't like pork, but will eat it on occasion) and love vegetarian style dishes, and being a midwesterner, I love a good hotdish ;)

I spend hours searching recipe websites and pinterest looking for something to cook that we would both eat, only to find things I would like, or, yet another chicken dish. I could eat chicken at every meal but he couldn't.

I'm not sure we'll ever be able to eat the same meal together. Any recipe suggestions that we might both enjoy?

it sounds somewhat like my SO.
he needs his meat (he has pernicious anemia)
    and I'm a veggie

We often do his and hers dishes.
so last night was chilli, he started with meat, i strated with tofu.
then add veggies/ sauce to both to make up to a chilli.

    that way we're both happy.
tonight its salmon, spinach and new potatoes, i'm going to try a mushroom rissoto bake instead, but with the veggies.

ON sunday it was roast with all the trimmings, but he had a lamb roast and I had quorn, we shared all the veggies & stuffing.

Things like that work quite well, it does mean 1 extra dish, but hes eating lots more veggies overall , then if we had just done our individual meals.

    Hope this helps.

Quorn mince and chicken style pieces are excellent for healthier meat substitutes.

Veggie pasta dishes can easier have meat added to them at the last minurte (after the non-meat lover's portion haas been removed).

yes thats another favorite, with sausages :)
  • This sounds like my husband and I. I make lasagna in two bread pans rather than one big one, then I can have veggie lasagna and he can have one with lean ground beef. Its easy to make his healthier without him noticing (light cheese and veggies mixed into the sauce is an easy trick). We also do stir fry, one batch of veggies and rice, then he sautee's chicken and I do tofu. I do make a low fat baked ziti that he likes despite its lack of meat...that's one of the few that we can eat as a family! Here's the recipe. (I usually make it with low fat ricotta and Ronzoni Smart Taste pasta for added nutritional value) http://www.livinglowfat.com/pasta/baked-ziti/
