I look at it this way. Are you losing the weight you wanting to? Are you feeling good from the exercise? If just started to workout then you are fine with 3 days a week. Once your body is used to the exercise then boost it up and do some more. Dont do more then your body will physically allow. Push your body to the limits but you know when you need to stop before you actually hurt yourself. the routines you are doing are demanding routines so that is a plus. I love to workout and i do something everyday.

The swimming doesnt feel that demanding... I dont ache after it so apart from learing how to swim properly I dont think its making much impact on my fitness/diet.. Would it be too soon to start horseriding or similar activitys on a sunday?

Yeah, i do the gym mainly myself. As for the swimming, once you get the hang of it and get a good stroke going it can be a great cardio exercise. After about 200m i hate swimming, lol. if those three days are not that taxing then i say yeah, do some more. Do some more cardio if that is what you like or set up a routine in the gym. I use JeFit.com for my workouts, it has a great droid and iPhone app. it is just not too good for the cardio log.

throw in two days a week of push ups, jumping jacks, body weight squats and lunges, and you'll be set.

I used to be a swimmer and my grandfather was a champion swim coach. Swimming is one of the best cardio and overall exercises you can do. Swim laps and you will actually sweat in the water. It doesn't feel as difficult because the water is helping to keep you up and provides buoyancy. It is easier on your joints. Trust me, it can be a workout! If you can't swim yet use a kick board and do laps kicking. You will burn calories and tone your muscles without the added strain as with gym activities. I love the gym as well, (I go 5 times a week and rest the other two days so my muscles can recuperate) dont get me wrong, but many people hurt themselves when they don't do the exercise right or they push themselves before they should. For people just starting out or overly overweight, walking is great too. Try to gradually increase your speed, distance and time you are walking or swimming. The main point here is to just begin getting some exercise. It doesnt have to cost you anything and you will be on your way to better health. Everyday can have a victory just knowing you got out and did something good for yourself. Congratulations on your success thus far! Keep up the good work! I am proud of you!
