A great chicken salad recipe

Take this and make your own...this is a food all of my friends ask for when I offer to fix something they want for a meal.
I vary it according to what I have on hand, the 2 main ingredients are chicken breast and apples...no matter what else I use, it's not the same without the apple.
Basic recipe is for: 2-3 servings
4-6oz cooked chicken breast, I usually boil it, this time I used leftover baked breast that I'd baked w/a wee bit of hidden valley ranch dip mix(tm)
one 3-4 in diameter apple, your favorite kind, skin on unless you absolutely hate it
1/8-1/4 cup walnuts or pecans -- i was out today and used 1 one inch radish
pepper, just a dash
mayo of any sort ~3 tbs mixed with ~1.5 tbs of milk, I use 1% or less (to keep it moist)
using any method you desire chop the chicken, apples etc (i've used celery, grapes, raisins, radishes, whatever will add crunch or I have on hand) mix well. Blend in the mayo/milk mixture till desired moisture, should be sticking together but not "all white" from the mayo.
put the chicken salad on your favorite bread or on a bed of lettuce, today I made mine on a fajita tortilla layered w/lettuce, my favorite is spread on reduced fat triscuits(tm)
the calories in the salad when divided into 2 servings, *each* using 'real' mayo is 270 (yes the fat is a bit high, I rarely use mayo for anything so I use the real stuff, you can use low fat or fat free) with the fajita 380

Love grapes in chicken salad.
You should try vegan mayo, it's actually really food for you so you can eat it mostly guilt free.0 -
