Recipes I've tried lately that worked well...

Hi there, had some nice meals lately and I would like to share the recipes. Also, it would be nice if you all would like to join in as I am always looking for new food inspiration
1) Potato and cauliflower curry. Make a paste with the spices, chilli jam and tomato paste and stir in the ingredients depending on which ones need the longest cook. Add stock, cook down then add yoghurt at the end.
Serves 4 - 217 cals per serving.
Carbs - 27g / Fat 11g / Protein 7g (all per serving)
Tesco - Pure Sunflower Oil, 22.5 g (1 tablespoon)
Generic - Ground Coriander Seed, 1 teaspoon
Generic - Cumin Seed, 1 tsp
Spices - Garam Masala, 1 tsp
Tesco - New Potatoes, 180 g
Cauliflower - Raw, 225 g
Sainsbury's - Tomato Puree, 4.5 g
Marigold Organis Swiss - Vegetable Bouillon - Reduced Salt, 250 ml
Tesco - Sultanas (25g Serving), 25 g
Sadaf - Red Lentils, 1/4 Cup Dry (32g)
Jif - Lemon Juice Natural Strength, 10 ml
Cottage Delight - Chilli Jam, 15 g
Asda - Frozen Garden Peas, 35 g
Blue Dragon - Sweet Chilli Dipping Sauce - Mild, 5 ml
Yeo Valley - Organic Natural Probiotic Yoghurt, 40 g
2) sweet potato and carrot soup
serves 5 - 194 cals per serving
carbs - 31g / fat 5g / protein 4g (per serving)
This is the basic recipe, you can add extra things to change it around (my husband added lime, coconut and ginger to it tonight and it was really nice).
Make it all in one big pan. Fry off veg and spices before adding stock and cook until everything is tender. Then use hand held mixer blitz it until smooth. Add milk near the end.

Onion - Whole, Medium Size, White, Raw, 1 whole
No Name - Sunflower Oil, 4 tsp

Produce - Carrots - Small (80g), 260 g
russian spice - tmin spice mix, 1 tsp

Marigold - Vegetable Stock, 3 tsp
Tesco - Semi-Skimmed Milk, 200 ml
(optional) Squash - Butternut, raw, 1 cup, cubes

I made a pretty simple eggplant "lasagna" that I thought came out tasty
cut up one eggplant into thin slice. Put them on a baking sheet (probably a couple of baking sheets) drizzle a little olive oil, sprinkle a little salt and pepper and bake 10-15 minutes until they are cooked through
then basically in a baking dish it's just layering the eggplant, a little cheese, sliced tomatoes, and some fresh spinach like you would a lasagna. Then bake for half an hour or so, so the cheese gets all bubbly and gooey and yummy0 -
Chicken Bruschetta (not mine, but super good and low in carbs, high in protein)
Servings: 4 • Serving Size: 4 oz chicken + tomatoes
Calories: 236.8 • Fat: 8.5 g • Protein: 32.4 g • Carb: 6.8 g • Fiber: 1.3 g • Sugar: 0.5 g
Ingredients:
3 medium vine ripe tomatoes
2 small cloves garlic, minced
1/4 cup chopped red onion
2 tbsp fresh basil leaves, chopped
1 tbsp extra virgin oil
1 tbsp balsamic vinegar
kosher salt and fresh cracked pepper to taste
3 oz part skim mozzarella, diced
1.25 lbs (8 thin sliced) chicken cutlets
Combine onion, olive oil, balsamic, salt and pepper. Set aside a few minutes. Chop tomatoes and place in a large bowl. Combine with garlic, basil, onion-balsamic combo and additional salt and pepper to taste. Set aside and let it sit at least 10 minutes or as long as overnight. Toss in the cheese when ready to serve. Season chicken with salt and fresh pepper. Grill the chicken cutlets on your indoor or outdoor grill, top with bruschetta and serve. (I baked mine in the oven)

Brown Rice with Black Bean, Corn & Tomato (vegetarian)
This is my "go-to" easy and very nutritious recipe that I use all the time!!! It stores well in the refrig.
You can eat it hot as it is, or cold. It makes a great filling for a wrap, or as taco filling (just add salsa); it can be a main course or use as a side salad. So here goes:
3 cups of organic brown rice (cook according to package directions)
Meanwhile, while the brown rice is cooking, ...Stir the following ingredients together in a medium/large bowl.
I can rinsed organic black beans
1/2 cup chopped onion (I use frozen chopped onions)
1/2 to 1 cup frozen corn (individual preference)
1 large tomato cut up ( or use 1/2 can of diced tomatoes drained)
1 tbs cumin
1 tsp chili powder (I like New Mexico chili powder).
Add hot cooked rice to the ingredients and stir until well incorporated.
Depending how you use this, you can add salsa, or cheese, or green chopped chilie, in spagetti sauce, wrapped in a flour burrito, in scrambled eggs....you name it!
