gluten free cook books or recipes

my son was just diagnosed with a celiacs and we now need to go gluten free in our home. I am wondering if there are specific cook books that have great simple recipes in them that kids will like.... we all know kids like simple foods. we are also taking a trip into the states and i know there will be a ton of items that are gluten free there that we don't have here, so is there any that you suggest to get that are pretty good? i may resort to making my own bread at home but would love a good recipe to experiment with.... hopefully this won't be a hard transformation for him..

    Try Gluten Free on a Shoestring. There is a cookbook and also a website with lots of recipes. The author has a son with celiac.

    I was diagnosed 3 years ago with Celiac Disease. I was an avid baker. I probably bought 20 different GF cook books bound and determined to resume my passion. Finally decided it was much easier to buy some of the GF premixed flour blends and just learn to tweak my cooking habits.

    One of the biggest challenges with "baking" in gluten free recipes is they are typically much higher in fat and sugar. So depending on your skill, desire, and budget I would recommend different approaches. Over the last 12 months the influx of gluten free products is amazing and some of them are absolutely delicious. I must say though, if I didn't have to be GF I wouldn't because it can be very challenging to get enough fiber, especially for adults trying to diet.

    A key to success is focusing on what you can have rather than what you can't and it is especially hard to navigate fast food restuarants...takes a while, trust me. If you want to send me an email with more questions I'm happy to make more suggestions...good websites, support groups, bakeries, flour mixes, etc., I just don't know how much info you want.
