need vegetarian food ideas

I want to start making 2-3 vegetarian meals a week, I think it would me good for my family but I have no clue where to start, Everything I ever make has meat in it, thats how I grew up, everything had meat, so need some good, and pretty simple recipes, anything helps, so far all I have for ideas is black bean burgers, salads, and soups.

Anything! Curries, chilli (use quorn mince or lentil/ vegetables in place of meat), stir fries.
I use a lot of meat substitutes as I miss the texture (very newly veggie/pescatarian) so quorn steak strips in stir fry, I use the mince, the 'meat'balls, their kievs etc.
Falafal are really good, you can throw any veg in a soup.

The following link is for "polenta pizza". I always make my polenta w/ half veggie broth and half milk. Also, for the toppings we use spinach, sun dried tomatoes and red onion, but you could add any sort of veggies...delicious!!

This veggie enchilada casserole is fabulous! We also add black beans and tomatoes to the veggie mixture and I season the veggies w/ cumin and other mexican spices. I use half the amount of cheese (just put it on top).

I have been on a kick with a stuffed sweet potato with lentils (mixed with bbq sauce, garlic, onions), steamed broccoli and a little shredded cheese. Not really a recipe but my lunch obsession for the week - so yummy and so filling!
You can't go wrong with a veggie stirfry either or another favorite is quinoa with marinara sauce, steamed spinach and goat cheese:)
Stuffed bell peppers with rice would be a good dinner!0 -

Eggplant burgers
Buy an eggplant, slice into 1 inch/1/2 inch circles, brush with lemon juice season with montreal steak seasoning and grill. put on hamburger bun and enjoy.
Lemon Veggie Rice
Put 1 cup of water in pot for every cup of rice you plan to make, squeeze lemon juice into water and drop the squeezed lemon rinds into water after juice is squeezed out, sprinkle water with basil to taste drop in handful of grape tomatoes (more or less to taste) bring to boil, remove lemon rinds, add instant rice (1 cup per cup of water) stir, cover and remove from heat, wait 20 minutes. yum.0 -

'Tomato-rice'
1 cup of uncooked brown rice (white rice works too)
1 tin of tomatoes
1 cup of water
1 white onion
1 clove of garlic (or 2, or 3, or 4 depending on how much you like garlic)
1 tsp Worcestershire sauce
1 vegetable oxo cube
optional-
pretty much any vegetables can be thrown in, (apart from potatoes)
beans, (sometimes I like to add a tin of adzuki beans)
diced chicken, quorn mince etc,
pepper, mixed herbs/spices,
* no need to add any extra salt, there is enough salt in the oxo cube *
1. Roughly chop the onion and garlic and lightly fry them in a large sauce pan and then remove them from the heat.
2. Add the tin of tomatoes, a cup of water, the oxo cube, the Worcester sauce and the cup of rice to the pan and start to stir. Put the pan back on the heat.
3. ?? This is your chance to add your own ingredients! Your favourite vegetable maybe, or some diced chicken? or not, your choice! ??
4. Bring to the boil, cover and then simmer for 30-40 minutes. Stir frequently to avoid burnt bits at the bottom. Ready to serve when most of the liquid ha reduced down and it starts to resemble a risotto.
5. Serve up and enjoy!
* Refrigerate and eat within 2 or 3 days. add a small amount of butter and microwave for 2-3 minutes *0 -
thank you for all the ideas, I would honestly love to become a vegetarian, but I am a pretty picky eater so, I'd have a very minimal meal list, but I will definetly try some of these out, and hopefully make me and my family a lot healthier0
