    I cut mine into large chunks and cook it up all at once. That way it's ready to go. I just cooked 4.5lbs of it last night since it was on sale at the market last week for $1.88lb!

    My favorite way to eat it is this.... I saute green & red peppers with onions.... then take the meat and slice it thinly and add it to the peppers. Then I put 6-8 egg whites with that. Eat it with a high fiber wrap with hot sauce! Total yumminess for me :)

    Marinade in Italian Dressing (the longer the better I usually do a day, but have even done 2 days) and grill. Let sit for 10 minutes before slicing then, slice at an angle.
