Cooking with soy milk?

I have a couple questions about soy milk vs. cow's milk. Having too much dairy makes me sick, so I started drinking soy milk to get the calcium and other nutrients without the lactose. The problem is that I'm not sure if I can cook with it (mac and cheese, soups, etc.) the same way that I can cook with cow's milk. I realize that the food may taste a bit different, but will it still turn out the same if I use soy milk? If not, is there something else I can use to make my favorite foods without the dairy?

    unfortunatley it does curdle at high heats! and does give the food a real undesired taste. I use lactose free milk to cook with
  • I cook with soy milk, (I also use almond and coconut) just the same as I used to with cows milk...just make sure your not buying vanilla flavored soy Milk :tongue:
  • I use SILK (soy milk) to cook with. It tastes better than regular milk as far as I am concerned and it makes my stomach hurt less and has less calories and cholesterol.

    Coconut and rice milk :) Soya is yucky with heat, I think.

    Not had a problem in any of the recipes I've tried using it in. I would suggest you try it and see.

    I use almond milk quite a bit for cooking...to me it doesn't taste quite as "nutty" as soy...the plain flavor is best for most foods (like mac & cheese or soups or gravy), but the vanilla flavor works well for baked items like cakes - the extra sweetness works well in that arena.

    I use Alpro - Soya Milk & have not had any problems. I use it in cooking as Wheelie_UK is diabetic & we eat together, I have used it in Porridge, risotto & for poaching fish. Wheelie_UK likes the Alpro - Soya Milk Light Unsweetened in his drinks as it is lower in sugars. I can't stand Soya milk in drinks, but using it in cooking is ok.
