2 delicious spinach salads that YOU will like!

I am loving both of these main-course worthy salads.
Making this one again tonight:
1. Grilled chicken (I substitute skinless rotisserie bc it's easier), portabella, corn and spinach salad with smoky paprika dressing! Bonus: it's already in the MFP database! NOTE: this does not take 2 hours to make if you just use rotisserie chicken instead! Maybe 30 minutes.

2. Berry, spinach and feta salad with slivered almonds and balsamic vinaigrette. This one is faster; on the table in 10 minutes!
MAKE DRESSING IN A JAR - SHAKE TO SERVE, STORE THE REST:
1/4 c. balsamic vinegar (get a really good one -- it makes a difference!)
3/4 c. extra virgin olive oil (same thing here; get a good one)
1 T minced garlic (like Spice World brand)
1/2 t. salt
1/2 t. pepper
2 t. brown sugar
Here's info on the dressing:
(appx 16 servings)
Per Serving: Cal: 99, Carbs: 2 , Fat: 11, Protein: 0, Fiber: 0, Sugar: 1
I mix the following in a large bowl with a little bit of dressing at a time (toss with clean hands); serve immediately. I might use less than half of the dressing for a full bag of fresh spinach -- depends on your taste:
Spinach, sliced strawberries, blueberries, mild feta and blanched, slivered almonds. Your choice of proportions on the salad ingredients will affect your nutritional info, but it's relatively low. The slivered almonds have the highest calorie content at about 170 cal for 1/4 cup. BUT they're worth it.
