Zucchini "Crab" Cakes

Recipe Yield 4 to 6 servings

Ingredients:
2 1/2 cups grated zucchini
1 egg, beaten
1 tbsp butter or margarine, melted
1/2 cup bread crumbs
1/4 cup minced onion
1 teaspoon Old Bay Seasoning TM
1/4 cup all-purpose flour
2 Tbsp Extra Virgin Olive Oil

Directions
1.In a large bowl, combine zucchini, egg, and butter or margarine. Stir in bread crumbs, minced onion, and seasoning. Mix well.
2.Shape mixture into patties. Dredge in flour.
3.In a medium skillet, heat oil over medium high heat until hot. Fry patties in oil until golden brown on both sides.

They are about 140-200 calories a piece depending how many you make (4-6 patties)! So yummy! Enjoy!

    These are wonderful! My mother in law made some for me! I LOVE this recipe! Yummy..... the zucchini gives you a full feeling and the Old Bay seasoning gives a great kick of flavor!!!

    This is an excellent idea, thanks! I will have to experiment to make it gluten free, but I will certainly give a try very shortly!

    You mean a Zucchini Patti or Pancake since there is no crab. This was posted a few days ago, hers were 17 cals each, mine are 26c and large but you don't seem to have an excessive amount of flour, weird.

    Im going to try this!

    One note about dredging though ~ I fill an empty spice jar with flour and sprinkle flour rather than dredge anything ~ its a more controlled even spread when you do it this way. :)

    No theses are NOT the "zucchini tots", those are a little different and mini size. These Zucchini "Crab" Cakes are large (size of a burger) & it's "crab" because Old Bay seasoning!
