Zucchini "Crab" Cakes
Recipe Yield 4 to 6 servings
Ingredients:
2 1/2 cups grated zucchini
1 egg, beaten
1 tbsp butter or margarine, melted
1/2 cup bread crumbs
1/4 cup minced onion
1 teaspoon Old Bay Seasoning TM
1/4 cup all-purpose flour
2 Tbsp Extra Virgin Olive Oil
Directions
1.In a large bowl, combine zucchini, egg, and butter or margarine. Stir in bread crumbs, minced onion, and seasoning. Mix well.
2.Shape mixture into patties. Dredge in flour.
3.In a medium skillet, heat oil over medium high heat until hot. Fry patties in oil until golden brown on both sides.
They are about 140-200 calories a piece depending how many you make (4-6 patties)! So yummy! Enjoy!

These are wonderful! My mother in law made some for me! I LOVE this recipe! Yummy..... the zucchini gives you a full feeling and the Old Bay seasoning gives a great kick of flavor!!!0

One note about dredging though ~ I fill an empty spice jar with flour and sprinkle flour rather than dredge anything ~ its a more controlled even spread when you do it this way.0 -

No theses are NOT the "zucchini tots", those are a little different and mini size. These Zucchini "Crab" Cakes are large (size of a burger) & it's "crab" because Old Bay seasoning!0 -
