I see these mentioned a lot here but how is the best way to eat/cook them?

I like them in veggie stir fry. Or on salad. Yummy!

Munch on them straight from the packet, grind them and add to porridge in the morning for a nutty flavour, toast them and add to salad, mix into yogurt with banana.... just experiment until you find something you like!

Every October we roast the raw seeds from the jack-o-lantern pumpkins. Just wash the seeds, pat them dry, drizzle with some olive oil (or melted butter), salt & pepper them a bit, and roast on a cookie sheet at ~350F to 375F until they start to brown, stirring them around every 10m or so. It usually takes 20-30m, depending on how brown you like them (and how dry you got them before roasting).
I usually use about 1/4 cp. olive oil per cookie sheet of seeds, and with three medium to large pumpkins we get 2-3 sheets of seeds.
Here are some other spice mixes we've used (per cookie sheet):
1/2 tsp. salt ,1 tsp. cayenne pepper, 1/4 tsp. black pepper, 1/4 tsp. white pepper
1/2 tsp. garlic salt and 2 tsp. Worchestershire sauce
1/2 tsp. salt, 1 tsp. cinnamon, 1/2 tsp. ground ginger, 1/4 tsp. ground nutmeg, 1/2 tsp. ground allspice
You can eat them shell & all if you don't mind chewing a bit more, or shell 'em in your mouth like un-shelled sunflower seeds.
"Pumpkin seeds in the shell contain 285 calories per cup. They also contain 12.42 g of fat and 11.87 g of protein, according to the U.S. Department of Agriculture. Pumpkin seeds that have been husked contain 721 calories per cup." So, before I oil/spice the seeds, I measure them out, total the calories for all of the seeds & oil, and figure a serving is 1/4-1/2 cup.

I read recently that all nuts and grains should be soaked and then dry roasted for easier digestion. who knew!0
