Bobby’s Baked Tilapia

Prep Time: 10 minutes Level: Easy
Cook Time: 12 minutes Serves: 4

Ingredients

Butter cooking spray
4 (6 to 8 ounce) tilapia fillets
Salt & freshly cracked black pepper
1 lime, finely grated zest and juice
2 tablespoons butter

Directions

Preheat oven to 375 degrees F. Coat a large cast iron pan with nonstick butter spray.
Rinse fish and pat dry; place on the cast iron pan. Season each fillet with salt, cracked pepper, lime zest and lime juice. Add fish to the pan. Place a pat of butter on each fillet and cook in the oven for 8 to 12 minutes.

( I don’t like pepper, and I don’t use salt when I cook so I substituted them for Mrs. Dash lemon pepper, I also don’t like lime so substituted the it for lemon.)

Mom’s Lemon Pasta

Serves: 6

Ingredients

1 pound of pasta
Any herbs
2 Tablespoons Olive Oil
1 Lemon, finely grated zest and juice
Salt and ground black pepper
1/4 cup grated Feta cheese

Directions

Active time: 7 minutes
Total time: 20 minutes

Bring a pot of water to a boil and cook pasta according to package directions. Blend the herbs, olive oil, and lemon juice in food processor. When pasta is al dente, drain and toss with herb mixture, salt and black pepper. Garnish with Feta cheese and lemon zest.

(I used Mueller’s Bowtie Pasta, McCormick Italian seasoning for my herbs. I also used Bertolli light olive oil, no salt or pepper, and Galbani Fresh Mozzarella instead of feta.)
