Wondering about changing diet plans

I've been restricting calories since July, when I started working with a trainer. He started me at 1500 calories and we slowly worked down to 1250. And as we went along the ratios of protein and carbs changed too, so that I've been eating 100g of protein and 80g carbs. When I follow the diet and do regular cardio, I get great results.

Sadly, I can no longer afford to work with a trainer any more. And seeing as how he is no longer big brothering my food intake, I'd really like to eat bread again. But since I started following MFP's plan, I haven't lost a pound. I think I may have gained one or two, actually. My trainer never had me add calories to my diet on the days that I exercised, and lately I've been giving myself maybe half of the exercise calories.

I'm wondering: due to my much stricter diet beforehand, is my body not responding to this program? It makes sense to me, but I would really like an excuse to be able to eat more carbs, so I'm hoping maybe I'm wrong.
