Give me your best healthy pumpkin recipes!!!!

I love fall! It is my favorite time of the year. And one of the things I love about fall is the food! Apples and pumpkins and spices, etc. So, I want to make some pumpkin inspired food HOWEVER most pumpkin recipes I usually make are not so healthy desserts.

So, what are your favorite healthy pumpkin-inspired recipes?!

Two things before you start to post a recipe...please NO ARTIFICIAL SWEETENERS. I do not eat or cook with artificial sweeteners including the normal splenda, equal, etc. but I also don't use any "sugar free" ingredients since they usually have artificial sweeteners in them. And also NO SOY MILK/ALMOND MILK, etc. I only drink/use dairy milk.

  • I make a regular turkey chili (lean ground turkey, kidney beans, onions, tomatoes, bell pepper, sometimes zucchini) and I stir in a can of pumpkin. It makes it seem richer.

    Don't know if it will work for you depends on if you will use a whey protein powder

    Pumpkin latte

    Make a mug of chi spice tea from tea bag
    toss in blender with canned pumpkin puree
    scoop of banana cream whey powder
    pumpkin pie spice
    give it a buzz and you get a nice frothy head!

    They are super quick, easy and delicious :)

    Another good one is Pumpkin Flax Quickbread. I usually make 12 muffins with the recipe and freeze them. That way I have a healthy snack to grab when I am on the go. One note on the recipe though, as per the suggestions of others who have made it before, I always cut the sugar back to only one cup. Here's the link:

    I make a winter vegetable soup. The ingredients are what's available at the time, but the base is butternut squash and pumpkin puree. I put those in the crock pot with a combination of rutabaga, turnip, carrots, parsnips, etc. I cover them with chicken broth, add some salt and pepper. I add some browned turkey to it, maybe garlic, onion or leek, and let it cook all day. Mash it a bit to make it creamy, and serve it with a bit of crusty oatmeal bread. Hearty, healthy, satisfying, and sooooo not low carb. It's a very popular dinner in my family.
  • Here is a low carb Pumpkin Bundt Cake Recipe (you can also make cupcakes)..I didn't have any All Bran cereal or walnuts and it still came out yummy.
