Black bean brownies recipe! (gluten free)

Black bean brownies! These are seriously light and fluffy and aren't filled with all the chemicals and junk you find in conventional brownies...plus you get the numerous additional benefits of black beans! And its totally gluten free!

Yields 10-12 servings

You will need:

1 can black beans, thoroughly rinsed and drained
1/4 teaspoon baking powder
1/2 cup unrefined brown sugar
1/4 cup dark cocoa powder
3 eggs
3 tablespoons virgin coconut oil
1 teaspoon vanilla extract
1 tbsp instant coffee
2 tbsp desiccated coconut to sprinkle on top before baking!

Blend mixture in food processor, then spray some oil onto grease proof paper and put into a baking pan, then pour the brownie batter in, top with coconut & bake at 180 degrees centigrade for 30 minutes!

If you divide the mixture by twelve, 1 brownie = 133 calories / 13g carbs / 4g protein / 7g fat

    Cool! I might try to bake these. I tried to make a chocolate cake with beans before but it didn't go so well. A carrot cake with white beans worked perfect though, maybe because carrot cake is a bit lighter in itself normally as well? Anyway, I love brownies so I have to give it another shot! :)
