Savoury protein pancake wrap (picture)

This is yummy, or at least I thought so! It kind of reminded me a bit of a Japanese sushi style wrap I once had.

Chilli courgette pancake wrap
Ingredients:

1 egg
3 egg whites
20g pea protein
7g wheat free flour
Tsp chilli flakes
Seasoning
5ml rapeseed oil (I think this is canola in the US)
60g grated courgette/ zucchini

Method:

Whisk up the eggs then add the protein powder. You will need to use a hand blender to combine the mix as it goes lumpy. Then stir in the flour. I also added a splash of soya milk to loosen the mix up a little. Mix in chilli flakes and seasoning then add the grated courgette
Heat the oil in a large pan on a high temp then reduce to a medium heat
Add in mix and then turn when cooked

I filled mine with spinach, lemon juice and a spot of extra light mayo

    It's a savoury tasting natural powder that can also be made sweet. I love it as its fab to bake with and also add additional protein to savoury dishes

    It's quite cheap too

    It could also be made with grated carrot, filled with cheese/chicken/ ham. List is endless!
