Easy Pumpkin Muffins

Just wanted to share this recipe that I found online


1 box (15.25oz/432g) of Betty Crocker Super Moist Cake Mix
1 can (15oz/425g) of Libby's 100% Pure Pumpkin

Combine both ingredients, batter will be thick. Bake at 350 degrees for 20-25 mins.

I used cupcake pans and it made 18 cupcakes.

Each cupcake/muffin is 141 calories

    What are the other stats? Carbs? Fiber? Protein? Fat? Did they taste good?

    Sat Fat 4.5
    Protein 1
    Fiber 1.5

    They are good tastes like a cake muffin with a hint of pumpkin but I think they would be really good with frosting, but I left them plain to avoid the added calories.

    Love pumpkin! This time of year the pumpkin ice cream has always been my downfall I'll have to try these instead!
  • what flavor cake did you use? white, yellow. These sound great, a nice treat.

    I just used the Super Moist Butter recipe yellow. I think next time I will try it with a vanilla flavored cake mix.

    You can also do this with Devil's Food Cake. The muffins end up tasting just like chocolate cake...you can't taste the pumpkin. I want to try it with a spice cake to taste the pumpkin. I've also got a red velvet mix I mean to try...but I don't know...for some reason I'm not sure the red velvet and pumpkin are going to work. We'll see.

    Thanks!!! I've heard of doing this with spice cake too, but I think I would prefer it with white/yellow cake. Thank you so much for sharing!

    Edit to say: Wonder if it would go well with carrot cake? I feel like that would be a great match!

    Does anyone know if we can get canned pumkin in the UK, looked at the main supermarket websites and cannot see it.

    Love the sound of all these recipes but wont be able to try them if I cant get the ingredients :-(
  • OMG, i just finished making these. I used the spiced cake mix. They are so yummy. I also used the mini cupcake tin. I got nearly 60 minis out of the recipe. That makes each about 35 cal a piece (or right around 100 cal for 3). The mixture is kinda hard to work with, but it's worth the effort.

    I'm planning on trying these just because they're so simple!

    I made a similar version that produced 12 muffins for 108 calories each. Just more complex.. :P
