I found this recipe in an old Prevention magazine.

Pesto Chicken Bake
Servings: 6

2 1/2 lbs bone-in, skinless chicken drumsticks or chicken thighs
1 1/2 lb baby red or Yukon gold potatoes
1 pint cherry or grape tomatoes
1/2 cup pesto sauce
2 Tbsp water
2 tsp olive oil

1. Preheat over to 425 degrees. Combine chicken, potatoes, tomatoes, pesto sauce, water, and oil in large roasting pan. Season with salt and pepper.

2. Bake 45 minutes,or until chicken is cooked through and vegetables are tender.

  • I am new to cooking can I add you as a friend & if u have more recipes will u share? I love chicken & fish low calorie meals, but my husband isn't liking my bland cooking these days!! lol

  • I make a few chicken recipes my favorite is French fried onion chicken! You get a thing of Frenches Fried Onion crumble them up then set to the side, take boneless skinless chicken breast and cut them into slices. Take an egg mix it in a bowl then take the chicken strips dip them into the egg and roll it into the crumbled fried onion mix then put it into the baking pan and bake at 350 until done!! it is delicious!!!!
