Red Kuri Squash- any recipes?

I bought a red kuri squash to try today and I can't seem to find any good recipies to use it as a side dish- have any of you ever made it?

    I haven't made this but it sure does look good!


    If you want something simple I would say just cut it in half, coat with a little butter or EVOO and add either salt & pepper or brown sugar depending if you want savory or sweet. That is my favorite way to eat a winter squash...butter and sugar, what could go wrong?

    Thanks gonna try to roast it with a little butter and b.s. Trying to get the kids to eat it.
