I thought of this recipe off the top of my head a few months ago, and it was a hit! So now I am sharing .
1 pound lean Ground beef
1 cup cooked brown rice
1 can of kidney beans, rinsed and drained
1 can of black beans rinsed and drained
1 cup of salsa
1 cup of Kraft - Natural Shredded Fat Free Cheddar Cheese
Brown the beef in a pan sprayed with non fat cooking spray. (If using Chicken shred it and cook it in pan). Meanwhile boil the rice.
Once rice is cooked place it on the bottom of a 13 x 9 inch casserole dish. Mix together beef (or chicken) beans, salsa and about 1/4 cup of the cheese in a big bowl and spread on top of the rice. Top with the remainder of the cheese, and cook at 350 degrees (F) (about 176 Celsius) for about 20- 30 minutes. Let cool about 10 minutes and serve.
Total calories per serving – 111
Total Carbs per serving – 13
Total Fat per serving – 2 grams
Total Protein per serving – 11 grams
Total fiber per serving – 3 grams
Total Cholesterol per serving - 19
All the "per serving" is if you decide to go with lean beef instead of chicken :flowerforyou:
