Buttermilk Recipes

I bought reduced fat buttermilk for cupcakes for my husband (it was NOT a low cal recipe, may I add, haha :wink: ) and I forgot to put the buttermilk in the batter. Cupcakes turned out good, but I'm left with a half gallon of buttermilk. I know this is probably an oxymoron, but does anyone have any healthy recipes using buttermilk? I hate to throw anything away - but I've never used the stuff before! Thanks :happy:

    You can make low fat ranch dressing with buttermilk and cottage cheese! I'm not sure of the details but I'm sure it's easy enough to google.

    I last used buttermilk for fried eggplant. I am not sure it was super healthy. I soaked the eggplant in the buttermilk then breaded them in panko, spices and parmesian and then fried them. I am pretty sure it could be baked though. :) You can always bread chicken with buttermilk and then bake it also. Good luck! :)

    I have a ranch recipe that is AMAZING! And 102 cals for 2 Tablespoons (not bad IMO, since I don't need much)

    3/4 cup mayo
    3/4 cup light sour cream
    1T olive oil
    1T lemon juice
    1/2 cup reduced fat buttermilk
    chives
    parsley
    1 tsp minced garlic
    1/2 tsp salt
    1/4 tsp white pepper.

    Combine all in a blender..blend. Will stay good about 7 days. SO.GOOD.

    Whenever I make a recipe that calls for buttermilk, I always measure out the leftovers into one-cup portions and put them in little tupperwares in the freezer. Yeah, I read somewhere that you're not supposed to freeze buttermilk, but I can't figure out why that would be -- hey, ice cream freezes fine, right? And since you have no choice but to buy a whole quart when you only ever need a cup or less, there's really no option! I do the same thing with coconut milk, since you only ever need about a cup for a recipe and a can holds a little more than two cups. Both thaw a bit "curdled", but the flavor of each stays the same and it hasn't had a bit of an effect on recipes that I've made with both fresh and frozen. Gotta make sure you label those little tupperwares, however. Don't want buttermilk in your Thai curry ...

    Oh, and did you know that buttermilk makes a great marinade for chicken? -- Keeps it really moist and yummy. Google "buttermilk chicken" and you'll find a whole mess of recipes.

    Buttermilk is really healthy. It has barely any fat because it is what is left when butter is made, that is where all the fat goes.

    I know people drinking it plain (which I don't care for) but it tastes really good in a shake. Blend buttermilk with some fresh or frozen fruit *yum*
  • I buy Lite Ranch dressing and then mix 1/2 dressing 1/2 buttermilk. Cuts the calories. You can change the porportions to suit your taste.
