a few questions about weight loss

Hi,
I am new to MFP. I often find, in many post in this forum, suggestion on having more protein at least 40% of your total calories intake. MFP by default set on 55% carb, 15% protein and 30% fat.
I'd like to know is there any member here who follow MFP composition on nutrition and still losing weight as much as you expect?
I ask this because foods in my place are very much based on carbs. It's a little bit difficult (and expensive too) for me if I have to eat more meat.
second question, some members here loss more than 100 lbs in just a year (or less). some others need 2 year to lose 50-70 lbs. each person get different result in their journey. initially i want to shred this 70 lbs away in a short time. but then i find i cant eat less then 1800 cal a day. at least until now.
for people who lose it in a quite short time, how did you achieve that? with works and kids and other activities that you have, how can you manage to concentrate on your weight loss? how to make an easy to do and effective plan for weight loss?
from february to june, i lost 13 kg (28 lbs). then i get very busy with jobs etc and did not continue for july-august. sept 1st, i restart my plan again. it seems to me my weight loss journey is going to be like this. in for 3-5 months, then off for 2 months, then restart it again. thank god i didnt gain any of my weight in my off-period.
it's just that i wish i could manage a plan that i can do continuously.

50%-60% of my energy comes from carbs, and I've been losing just fine. I exercise a lot and make sure my carbs mainly come from rolled oats and other whole grains as well as vegetables. The lower the glycemic index is the better.0

Im losing weight with the nutrition guide given by MFP but I always go above on my protein. A great way to easily get protein without having to be constantly having meat is egg whites and tuna ( low sodium). they are super easy to add to anything. Also the more healthy foods you add the more you will find it hard to reach the 1800 calorie limit. But there are also days I cheat really bad as long as you keep getting back up and trying you are doing something better for yourself than you have ever done before. Also if you find it hard sometimes to do both excersise and diet and you don't have time one month just try to at least make the diet happen almost all days for that month, every little bit counts.0
