What to serve for 2010 Olympics gathering?

Hi all,
I could sure use some ideas! I am having a couple of folks over to watch the Opening Ceremonies of the 2010 Olympics and I am not sure what to serve! Everyone is totally on board with the healthy - eating thing, so that's not an issue, but all the ideas I am comming up with are so blah! Help!!

pretzels and hummus and maybe bruschetta light on the olive oil. You could toast your own bread for it that way it could be a healthy whole grain bread.0

What about veggies that can be sliced into circles, like the Olympic rings? Such as bell peppers... Or you could make a couple of national dishes, like sushi and borscht.0

One of my favorite things to serve is a fresh mozzarella tomato and basil salad. A little olive oil salt pepper and garlic powder, and its a great starter. Its not heavy and can be served with some toasted whole wheat pitas. Have fun.0
