Salsa
Since I had a lot of homegrown tomatoes and peppers that I didnt want to go to waste I decided to make homemade salsa. I looked online for recipes but in the end just put what I had in and guessed at the salt and vinegar amounts. I'm not too worried about it going bad because it'll be gone by the end of the weekend anyway. My family uses this on large bagels or eaten on very toasty bread that has olive sprinkled on before the salsa.
Ingredients:
2 small-medium tomatoes red
1 medium-large red large diced
1 medium green tomato diced
1/2 jalapeno red small diced
1/2 jalapeno green small diced
2 garlic cloves thinly sliced
1 yellow bannana pepper sliced & deseeded
1 red sweet long pepper sliced & deseeded
1/4 onion diced medium
about 1/2 tsp salt
about 3/4 tsp rice wine vinegar (I sub'd this for white vinegar because I'm out of white)
Mix all together. Makes about 2 quarts
