Chicken Wild Rice Soup
Made this last night and LOVED it. Thought I would share:
2 Packages of Uncle Ben's Chicken Wild Rice (Country Inn)
2 - 4oz Chicken Breasts (already cooked)
1 Can of Cream of Chicken (Reduced Sodium) Consensed Soup
1 Can of Cream of Mushroom (Reduced Sodium) Consensed Soup
4 cups of Fat Free, Less Sodium Chicken Broth
16 Oz of Fresh mushrooms (sliced)
1 Cup of Celeray (diced)
1 Medium Onion (chopped)
In a large pan, saute the Onion, mushrooms and celery, until the mushrooms have released their juices (about 4-5 minutes). Add the 4 cups of chicken broth and bring to a boil. Add all of the rice from the two packages of Uncle Ben's Chicken and Wild Rice (but only add 1 of the seasoning packets that come with the box). Bring this to a boil, then reduce heat, cover and simmer for 10 mintues.
While this is simmering, dice up those pre-cooked chicken breast. After the 10 mintues, add the chicken meat, and the two cans of condensed soup. Cook on low until everything is heated.
I made this into 6 pretty big servings and the stats came out as follows for each serving:
Cals:303
Carbs: 53
Fat: 4
Protein: 16
Chol: 24
Sodium: 1567
A little high on the sodium, but if you would make this with home made broth, I am certain that this number would go down considerably. (I just didn't have any left in the freezer)

There's a bunch of really good recipes on pinterest on how to make healthy substitutes for cream of whatever soups. The sodium is ridiculous, you could easily fix that up.0

Any educated guesses on what the serving size was? Around a cup? More?
