I just found this recipe on Pinterest. It makes 24 cookies at only 36 calories per cookie:
Ingredients
1 cup better n’ peanut butter (800cal)
1 cup sugar substitute/stevia (0cal)
1 egg (70cal)
1 tsp baking soda (0cal)
1. Preheat oven to 350 degrees F.
2. Grease a baking sheet with butter (or PAM!) and set aside.
3. Combine peanut butter and sugar in a mixer until smooth.
4. Add egg and baking soda and mix for another 2 minutes.
5. Roll 1 tsp of dough into balls and place onto the sheet. Flatten them.
6. Bake for 10 minutes, until lightly browned.

Thanks - I love PB cookies0

No need for butter OR Pam if you line your cookie sheet with parchment paper0
-
Will have to make these. Thanks!0

Just my opinion, and it might be better used as an ingredient rather than eating plain, but I wouldn't bother spending your money on Better N' Peanut Butter.... the taste is NOT worth the reduced calories. MHO0

so i am wondering.... can we use egg substitute? I like using "better than the egg" its 99% fat free0

I've never heard of "better than egg." I guess if it's used in baking, it would work. But the one egg in the recipe works out to less than 3 calories per cookie.0 -
I'm confused with the sugar substitute...maybe someone can clarify it for me. I have read online that if your using stevia and the recipe calls for 1 cup of sugar that you should just use 1 tsp of stevia....seems odd to me. Anyone ever cook with stevia and followed that conversion?0

Agreed...it is pretty gross. I'd use PB2 instead! And you can use 2 egg whites in place of a full egg, you won't be able to tell the difference.0 -

3 scoops vanilla whey protein powder
1 egg
1 tsp vanilla
Makes about 15 cookies that are about 75 cals each, but macros are 5/5/5.0 -
