    Has anyone tried finely ground oatmeal in place of flour in a arecipe like this?

    Thoughts friends???

    I grind up oatmeal for homemade protein bars and it works really well! They're cake consistency, so it would probably work for these. I'll try it—thanks for the tip, I wouldn't have remembered to do it!

    I would say just as muffins. They collapse a little when coming out of the oven. They are more just to hit a craving than to replicate a banana bread muffin.

    My go-to "healthy" banana bread recipe is as follows:

    2 cups unbleached flour (can sub half with oat flour)
    1 tsp baking soda
    1/4 tsp salt
    4 bananas (or 2 cups mashed)
    1/2 cup egg beaters
    1/2-1 cup sweetener (sugar, splenda, stevia will all work)
    2 tbsp canola oil (optional)
    1/2 cup nuts (optional)

    Combine wet ingredients + sugar. Then add in dry ingredients and stir just until combined. Bake at 350 degrees for 1 hour.

    With a no-calorie sweetener and without the optional add-ins, it is 105 calories per slice (12 slices).
