For the salad lovers

Heyy! I just wanted to share a salad dressing recipe I found in Dr.Fuhrmans book 'Eat to Live', i absolutely LOVE this dressing and refuse to buy store bought anymore. It's pretty well low in everything including sodium and sugar whichhh I've never been able to find in stores.

Dijon Date Dressing/dip

1 cup water
1/3 cup raw cashew butter
4 tablespoons raisin vinegar or balsamic vinegar
2 tablespoons no-salt seasoning (Mrs.Dash)
2 tablespoons Dijon mustard
4-6 dates, pitted
1-2 cloves garlic, minced

Blend all ingredients in blender

I added the recipe into my account and the nutritional value for the total recipe is:

calories: 559 carbs: 88 fat: 35 protein: 17 sodium: 201 sugar: 42

I put it in as having 11 servings but it probably has more, depends how much you use. It usually lasts me more than a couple weeks. So per serving at 11 servings a recipe it came to:

calories: 51 carbs: 8 fat: 3 protein: 2 sodium:18 sugar: 4

    what is the flavor like? sounds pretty good, but not sure what those strong flavors together would come out like. what kind of salads do you put it on?
  • i put it on just normal vegetable salads sometimes with chicken, or on wraps or pitas. i was having a hard time finding a salad dressing that was healthy and exciting enough to make me enjoy my salad everyday. you can't taste the cashew butter, that's just to add the creamy & thickness to it. i don't really know how to describe the taste. the flavour comes more from the vinegar, dates and mustard. i find the seasoning makes quite a difference too, i like the mrs.dash seasoning the best in it. i really enjoy it and suggest trying it! iv convinced a few friends to take the time to make it and theyve all loved it as well. hope this helps :)
