Help with some ways to get my veggies in...

I'll admit it, I'm not a big fan of veggies. I like salad, I like lettuce and tomato on a sandwich...but that's about the end of it. I'm willing to start trying new things though, any advice would be appreciated. How do you eat your veggies throughout the day? What are some of your favorite vegetable recipes? Thanks!

    I like them dipped in hummus. Carrots, little cherub tomatoes or cucumber cut into sticks dipped into garlic hummus got me to eat more veggies.

    Try sauteeing some veggies (squash, tomatoes etc) and put over pasta.

    hummus.......that was how I started with my veggies.

    I also like to make a wrap with just veggies. I spread hummus on the wrap, baby lettuces, shredded carrots, onions if you like them, tomatoes, and any other veggies you have....I put 1 tsp balsamic vinegarette dressing............wrap up tight and munch away.....I get 3-4 servings of veggies in one yummy delish wrap!

    Also....I add veggies to my tomato sauce, throw veggies in my soup............even canned. I steam them in the micro, and add the fresh to the canned......
  • I use a vitmix high speed blender and drink my 5 a day of fruit and veggies. Sometimes I add protein powder or extra virgin olive oil. Really easy and no raw food gas issues

    Sautee about 1/2 cup of egg plant in some olive oil. Add some squash, green pepper, onion, garlic and whatever else you like. Pour in about a 1/2 cup of tomato sauce and heat it up. Pour over pasta. It ends up being like 4 servings of veggies and it tastes yummy.

  • Since you like salad, eat one to begin every major meal, like lunch and supper. I like to start those meals with a BIG salad (if I can) and then I fill up much faster on the right sized portion of foods. Good luck.

    I have a vitamix, what recipe do you use for your 5 a day?

    Whenever I make a salad I shread a carrot into it. Whenever I make something in the vitamix I add a carrot to that too, sometimes other veggies depending on the mixture.

    I agree with the person who said eat salad with every meal. If use a small amount of low fat dressing, very few calories are added, in most cases less than 100. As for v8 juice it is better to eat fuit and veg than to drink them because the fiber in whole food is beneficial to the digestive process, it actually helps your body to pass fat rather than store it. try making sweet potato "fries" (Sweet potatoes are a powerhouse vegetable) peel and slice a sweet potato into french fry sized strips toss with very little olive oil or place on a sprayed baking sheet and spry with a little more cooking spray. Sprinle on a little cumin and cinnamon( very little) Bake at 400 for 20 min. turning every few minutes. may take a little longer depending on how thick your slices are. lightly salt or not and enjoy! I love these with veggie burgers
