Seeking inspiration from fellow scratch-cooking home cooks sharing the struggle of aligning your healthier diets (esp. 1,200 cal./day) with the preferences of your meat-and-potatoes, vegetable-loathing, carb-loving spouses, which aspect certainly adds another dimension of difficulty to attempting healthy lifestyles. ;-)

I dont fit the bill of what you are describing because it hasnt been a struggle, in fact, my husband has been enjoying everything where the foods are freshly made.
I just made a 5 gal batch of homemade chicken vegetable soup which was good timing: my husband is sick as a dog with an upper respiratory-related cold and he is on bowl number two right now! LOL
Anything can be accomplished in my books... and spouses need to be accomodating and be willing to try new things... it wont hurt them 8-)

I am a chef through and through! I love to cook and I have created numerous recipes that are not only delicious but healthy too. I am a mom of 4 kids that are 2. 4. 6. and 8.0

I try to do a majority of my cooking from scratch, but I'm only cooking for myself, so also not finding it difficult. Except for the fact that I work out daily and work 10-12 hour days frequently, so sometimes the time management gets taxing.0

Hey! I'm also a foodie.... and I cook every day from scratch. I've been using a lot of Clean Eating Magazine recipes, which is a big change from the recipes I used previously! My DH is slowly adjusting to the new cooking -- he is missing some of the french meals and he has been hinting that it's time for chicken pot pie. (I haven't figured out how I am going to lighten up that recipe-- and it's his favorite!)

You can add me!! I love to cook. Most things I do are from scratch! I just made homemade lasagna (from my canned spaghetti sauce), herb buttermilk biscuits and salad! My tummy is sooo happy! :laugh:0

I'm vegetarian and the two men in my family are pretty much the opposite. Some days it is a real challenge to come up with meals we can all tolerate, if not enjoy. Son hates soup, carrots, and pretty much anything other than "American" food or Taco-Bell-type "Mexican." Oh, and he likes chicken fried rice. Husband has an aversion to nearly all of the healthier veggies but he has come a very long way and has actually *liked* broccoli the way I made it recently. He does like carrots quite a bit and he's cool with all my Indian and Thai and Ethiopian experiments.
Would be happy to have you on my friends feed in case anything I might say would be helpful to you.
Baked kale chips (lots of recipes if you google that) are one thing we all like.
Oven-roasting Brussels sprouts until they are practically burnt on the outside and mushy on the inside is they way my husband likes them, and I think they're okay that way, too.0 -

YUM. Homemade chicken noodle soup is definitely not a dish with which many husbands find fault, thankfully, nor a dish I will have to modify: I was surprised to find my version comes to around 140 cal./1.5 c. serving!Anything can be accomplished in my books...

Coooking (and baking) are my two favorite activities in the world. I have 3 kids, a full time office job, commute 2.5 hrs per day, and still cook all of our daily meals.
I'm very new on my fitness journey and still figuring out how to tinker my grandma's very delicious (but very fattening) southern favorites into something I can eat guilt free. I'm constantly inventing in the kitchen, like my peach cobbler cups today, and would love to meet others who are doing the same.0
