Artichoke Spinach Hummus (low cal, high protein, and yummy)

You're going to love this if you like hummus and spinach artichoke dip!

1 can chickpeas
1 jar marinated artichoke hearts (7.5 oz)
1/2 T minced garlic
1/2 cup fresh spinach

Cook chickpeas, cool and drain off liquid. Blend chickpeas with 3/4 jar of artichokes (including liquid) and garlic until smooth. Add remaining artichoke hearts and spinach and blend until broken. The recipe that I based this off of called for parmesan cheese on top, but I had some laughing cow tomato and basil cheese so I used that. I think that I will try swiss or mozzarella next time. I put it in a crock pot and served it warm with Triscuits.

1/2 cup prepared with the Laughing Cow cheese has 115 calories, 16 carbs, 5 fats, 5 protein, and 4 fiber.
