Maple-roasted sweet potato bites + PB for dipping!
Options
Almost as simple as the title suggests!
You will need:
1 medium sweet potato
1 tbsp pure maple syrup (light if possible)
1 tsp cinnamon
Sprinkling of brown sugar (optional)
Olive oil spray
Smooth organic peanut butter
Chop the potato into whatever size pieces in the shape that you like, spritz a non-stick baking tray with oil, toss on the potato pieces then pour over the maple syrup and sprinkle with cinnamon and brown sugar. Bake at 200 degrees centigrade for half an hour (if the pieces are small, adjust accordingly) then dip into peanut butter when finished.
