Healthy/Skinny Casserole Dishes
Does anyone have any healty/Skinny Casserole recipes. I don't really have much time to cook. I get off work at 5 and then go to the gym so I usually can't get start cooking until about 7:00 and by that time I'm too tired to cook a meal. I know I'm not the only one with this problem so any help would be great. Something that could be prepared the night before would be great so all I need to do is stick it in the oven when I get home. Thanks!

Check the recipe forum for the chicken & biscut casserole that I just posted. It's fast, easy, uses ingredients you probably already have in your kitchen, and its delicious. As an after thought, I would maybe cut the cheese down by half next time around.0

Crockpot is probably your best bet but I do a chicken casserole with broccoli and cheese. It's just cooked and diced chicken breast mixed with reduced fat cream of mushroom, cream of chicken, frozen broccoli, and shredded cheddar. I top mine off with Stove Top stuffing but there may be some healthier options for the topping. I don't do casseroles often because they end up being cheesy and fattening for me.0

I saw this recipe once for a foil pack chicken. I cannot for the life of me remember what site it was on, but I make variations of it all the time for dinner.
Grab a piece of aluminum foil, spray it with olive oil spray, throw in some rice, chicken, broccoli, corn, carrots, (whatever else you want!), put a little bit of fat free ranch or italian on top and pop it in the oven. Bake at about 400 for 15-20 minutes and you've got yourself a perfect dinner. I usually pop it in the oven and take a quick shower. By the time I'm done, so is my dinner
I also agree with the others though... a crock pot can be your very best friend!!! Almost anything you can do in the oven can also be done in the crock pot!0
